International Cooking Measurement Reference: US, Metric, Australian & Imperial

Recipe measurements are not globally uniform. A “cup,” tablespoon or fluid ounce can represent a different volume depending on the source. This guide keeps those standards separate and explains when ingredient density matters.

Use the right measurement system before you convert

First identify the recipe's country or stated standard. Then keep volume units separate from mass units. This prevents two common errors: using a US fluid-ounce factor for an Imperial recipe, and treating grams-to-cups as if every ingredient had the same density.

“Metric cup” is a cooking convention rather than an SI base unit. When a recipe publisher defines its own household measures, follow that publisher's definitions.

US customaryUse 236.588 mL per cup and 16 US tablespoons per cup.
Metric recipe cupCommonly 250 mL with a 15 mL tablespoon.
Australian recipesCommonly 250 mL per cup and 20 mL per tablespoon.

Volume ounces are not weight ounces

Fluid ounce = volume. Ordinary ounce = mass. The shared word “ounce” does not make them interchangeable.

For liquids and recipe volume, use mL ↔ fluid ounces. For mass, use grams ↔ ounces or ounces ↔ pounds.

Why grams ↔ cups requires an ingredient

Grams measure mass while cups measure volume. The conversion therefore depends on what is being measured. One US cup of all-purpose flour may be represented by a practical baking reference near 120 g, while one US cup of packed brown sugar is substantially heavier. Packing, brand, grind and moisture can also change the real-world mass.

US vs Imperial fluid ounces

A US fluid ounce is 29.5735295625 mL. An Imperial fluid ounce is 28.4130625 mL. That difference compounds in larger recipe quantities, so Solveberry's fluid-ounce calculator makes the standard explicit rather than silently assuming one.
